Ingredients of Mutton curry
- Prepare 1 kg of Mutton.
- It's 2 tbsp of curd.
- You need 2 tsp each of Chilli powder, Coriander powder.
- You need 1/2 tsp of Turmeric powder.
- You need 3 of Onion thinly sliced.
- You need 2 tbsp of Ginger garlic paste.
- You need 2 of Green chillies slit lengthwise.
- You need as required of Oil.
- Prepare 1 of Bay leaf.
- It's 1 tsp each of Shahi jeera (caraway), Fennel seeds.
- Prepare 3 of Cloves.
- Prepare 1 of Green cardamom.
- It's 1 inch stick of Cinnamon.
- It's 1 of Star anise.
- You need 4 of Black pepper.
- Prepare 2 +3 of Tomatoes chopped , purred.
- It's Handful of coriander and mint leaves.
- You need 1 tsp of Meat masala.
- You need to taste of Salt.

Mutton curry step by step
- Dry roast the chilli powder, coriander powder and turmeric powder until a slight change in colour happens with good aroma..(you can skip this step if you are in a hurry).
- Wash the meat properly and rub the Curd and dry roasted spice mix and let it sit in fridge while you ready up the masala mix.
- In a pressure cooker pour some oil and throw in the spices.. Bay leaf, shahi jeera, cinnamon,star Anise, clove and fennel seeds.
- Now add the sliced onion and fry it till golden brown.. Then add the ginger garlic paste and Green chillies to it. Give it a good stir until the raw smell goes off..
- Add the chopped tomatoes to it and give a good stir and wait for them to get mushy and then add the marinated mutton from fridge and handful of coriander and mint leaves.. Stir for few minutes add the pureed tomatoes with some meat masala to it and add require water and salt.
- Pressure cook it till 4 whistles Garnish with coriander leaves and serve with rice or roti.
