- You need of basic sauce.
- You need 1 tbsp of Ghee or clarified butter.
- Prepare 1 tbsp of olive oil.
- You need 350 grams of tofu or use boneless mutton shoulder, lamb or goat if you prefer, cubed.
- It's 1 small of onion, sliced.
- You need 2 clove of garlic , crushed or bruised and very finely chopped.
- You need 1/2 tbsp of finely grated ginger.
- It's 1/4 tsp of garlic powder.
- Prepare 1/2 tsp of turmeric powder.
- It's 1 pinch of ground nutmeg.
- You need 1/2 of fresh red chilli , seeds removed and chopped finely.
- It's 7 of curry leaves.
- Prepare 2 tbsp of tomato puree.
- Prepare 3/4 can of of best plum tomatoes,.
- You need 250 ml of vegetable stock.
- Prepare 2 tbsp of not heaped, of your favourite Masala Powder. I usually use Kolhapuri Masala but Graram Masala will do.
- You need 2 tbsp of fresh chopped coriander (cilantro).
- You need 50 ml of coconut cream.

- First of a all brown of the tofu or meat in the oil and butter and set aside until needed. Keep the butter.
- In the butter soften the onions , garlic and ginger..
- Add turmeric, fresh chilli and the curry leaves cook until it releases it's aroma about a minute or so.
- Add your Masala powder and the nutmeg combine the mixture well.
- Add the tofu ( you can marinade this first, see my marinaded tofu recipe) or the meat mix gently.
- Add the tomatoes and break them down gently.
- Add the stock and simmer gently if using meat for about 90 minutes until meat is tender . If using tofu make sure it is heated thoroughly through, add half of the coriander..
