  7. You need 2 of tomatoes.
  8. You need 1 tbsp of coconut(dry or fresh).
  9. You need 8 pieces of almonds.
  10. It's 2 of green chillies.
  11. It's 1 bunch of fresh Coriander leaves.
  12. It's 4 of green Cardamom.
  13. You need 2 of black Cardamom.
  14. Prepare 4 tbsp of ghee.
  15. It's 2 of small Cinnamon sticks.
  16. You need 1 tsp of Fennel seeds.
  17. It's 4 of Cloves.
  18. Prepare 3 of Bay leaves.
  19. It's 1 tbsp of garlic paste.
  20. Prepare 1/2 tbsp of ginger paste.

  22. Prepare 1 tsp of red chilli powder.
  23. Prepare 1 tsp of Kashmiri chilli powder.

Mutton Rogan Josh step by step

  1. Wash and drain Mutton pieces..
  2. Add curd and Meat masala..
  3. Keep in refrigerator for 2 hours..
  4. Heat ghee or in pan and fry chopped onions till golden brown in colour..
  5. Drain and keep aside..
  6. Boil tomatoes and remove skin..
  7. When it cools grind it with coconut (dry or fresh), almonds, green chillies and a small bunch coriander leaves..
  8. Grind fried onions separately..
  9. Heat ghee in pan..
  10. Put whole garam masalas like green cardamom, black cardamom, Cinnamon sticks, fennel seeds, cloves and bay leaves..
  11. Add garlic paste and ginger paste..
  12. Cook on high flame for a minute..
  13. Add turmeric powder, red chilli powder, Kashmiri chilli powder and Meat masala..
  14. Add tomato paste mixture and cook for 2 or 3 minutes..
  15. Add grounded fried onions, salt and Mutton pieces..
  16. Cook on high flame till oil starts separate..
  17. Add some water and cook till mutton pieces will tender..
  18. Garnish with coriander leaves and serve hot with paratha/naan..
